Now, can I just start this blog post by saying that this recipe contains no chocolate whatsoever. And really, what an awesome way to get kids to eat fruit (just give them a muffin!! I’m pretty fussy when it comes to muffins and I prefer not to make the hugest batches as I really think they are best eaten on the day they have been made… And if you made them in a mini-muffin tin then you would get heaps (do you like my specific quantities?? My two three tips for moist and delicious muffins?? and just mix a tiny little bit (mix it the least possible amount you can, while obviously still combining everything! If you think your oven runs hot, then turn it down a little and check them regularly. Just before baking, sprinkle a little raw sugar over the top of each muffin. Now I made my muffins in my Thermomix but they could be just as easily made without one so I’ve included both sets of instructions below! I highly doubt he was singing about muffins anyway! Add the oil, milk and egg and mix on Reverse Speed 5 for 15 seconds or until really well combined. Add the self raising flour, coconut and sugar and gently mix with a spatula or wooden spoon until just combined – be careful not to over mix. Spoon mixture into papered muffins tins and sprinkle with extra raw sugar. Bake for approximately 20 minutes (turn tray after 10 minutes and then check at 15 minutes). Leave in tray for a couple of minutes and then place onto a wire rack (so the muffins don’t sweat).
Haha no but really, sometimes even a total chocoholic like myself (and one who thinks there is something seriously wrong with making muffins without chocolate) needs a little break from the sweet stuff. I love that they get their sweetness and moisture from all of the yummy fruit inside. If you wanted to make them slightly smaller, you would easily get 12 in a batch. You can mix your wet ingredients together as much as you like, but as soon as you add in the dry ingredients, STOP!!!! There’s nothing worse than a dry muffin so check them with a skewer a few minutes before the cooking time is up and if there’s no wet mixture on the skewer, whip them straight out of the oven!
